Bok Choi or Pak Choi

Mild and crunchy leaves with a pleasant tangy taste. Stems require a few more minutes cooking than the leaves.

Basic Stir-fry with Peanut Oil and Garlic Recipe

2 kgs of Pak Choi
2 tbls peanut oil
1 tsp sugar
1 tsp minced garlic
salt or soy sauce to taste

Instructions:

  • Cut stems into 2cm pieces and slice leaves coarsely.
  • Heat wok or heavy frying pan. Pour oil in. Add stems and toss over moderately high heat until softened, about 2 minutes.
  • Add sugar, garlic, salt and soy sauce. Add reserved leaves. Toss another 2 minutes. Serve. (2 servings)

Wong Bok or Chinese Cabbage

One of the most popular Asian vegetables. It is a cross between pak choi and a turnip. It is shaped similar to a cos lettuce. Its closely packed broad leaves have a pale white midrib and pale-green edges. It has a delicate flavour.

Preparation
Cut the cabbage in halves or quarters lengthways. Wash thoroughly and shake off water. Shred finely for salad, or cut into chunks for stir-frying, steaming or adding to long-cooked dishes for the last few minutes of simmering. It has the most delicate flavour of all the cabbages and is eaten raw in salads, shredded and added to soups at the last minute, stir-fried or lightly braised.

To determine when your Chinese cabbage is ready to harvest, squeeze the plant in the centre, if there is firm resistence, then the cabbage is mature.

Snow pea

The snow pea is a bright green, flat, thin, tender pea that the entire crisp pod can be eaten whole.

Harvest your snow pea often to encourage further flowering and more pods. Pick the snow peas before they start to mature so that the unique taste is not lost. Try to pick snow peas close to cooking time, as flavour is best closest to harvest.
