Baked Vegetable Toss
Great with cooked or
BBQ meat
Serves 6
Ingredients
2 tbls extra virgin olive oil
2 medium onions, cut into wedges
6 medium potatoes, peeled and cut into large cubes
2 zucchini, cut into thick slices
8 ripe tomatoes, chopped
1 green capsicum, sliced
1 red capsicum, sliced
1 carrot, peeled and cut into thick slices
2 garlic cloves, crushed
2 tsps fresh oregano leaves, chopped
4 tbls fresh parsley, chopped
salt and pepper to taste
2 tbls water
Instructions
Preheat oven 180 ° C.
Prepare vegetables and herbs.
Place garlic and vegetables into a large bowl, then pour over olive oil. Toss until combined.
Place the vegetables in a large baking tray, season with salt and pepper. Sprinkle fresh herbs over top and pour in water.
Cover tightly with aluminium foil and bake approx. 1 hour.
Remove baking tray from oven, remove foil. Gently toss vegetables, then return to oven for a further 30-45 minutes.
